The supervision of the vineyards and the vinification of the Domaine du Château du Val de Mercy are in the hands of its partner Bertrand THIBAULT, Engineer, Oenologist, son of a wine growing family, which has influenced the methods of traditional Burgundy wine making over generations.



Tradition, Passion and Patience



It is the pride of the Domaine du Château du Val de Mercy to bring its excellent wines to the market when they are close to their maturity after aging for some years in its cellars.

 

The Domaine du Château du Val de Mercy

The Domaine du Château du Val de Mercy has more than 30 ha of the vineyards which are located for two thirds (22 ha) in the AOC Chablis area  and for one third (8 ha) in the “Auxerrois” area, in the historical village of Chitry-le-Fort known for its fortified church. Nearly all of the vines of the Domaine are at least 20 to 50 years old producing wines of outstanding intensity and quality.


The Domaine produces predominatly white wines from Chardonnay grapes with the following Appellations : AOC Chablis 1er Cru, AOC Chablis, AOC Petit Chablis, AOC Bourgogne Chitry and  AOC Aligoté. The Chablis 1er Cru wines are produced in two different locations (or as the French say: Climats) kown as  «La Côte de Jouan» and «Les Beauregards». A small vineyard in St. Bris le Vineux is planted with Sauvignon grapes. Some selected wines are aged in oak barrels in the old vaulted cellars of the Château. The vineyards of Chitry le Fort, located in the «Canton de Chablis», produce a white, which has the same typicity as the best Chablis wines.



Red wines are produced in the Auxerois area with Pinot Noir grapes with the following Appellations: AOC Bourgogne Coulanges la Vineuse and AOC Bourgogne Chitry. These wines are aged in oak barrels following old Burgundy tradition.

In 2007 the Château du Val de Mercy has expanded its activity to the Côte de Beaune area: A new production facility will revive old traditional methods of wine making in a historical building in Pommard. The Domaine has acquired old vines in Pommard and Auxey Duresses. Unfortunately the results of these efforts will be available in the market only in a  few years.
